Pikelets
I love this recipe as a light lunch or an after school snack. You can put maple syrup, or even jam and cream on.
Pikelets
1 cup plain flour
1 teaspoon baking power
1/4 teaspoon salt
1 egg
1/4 cup sugar
3/4 cup milk
Sift flour, baking powder and salt into a bowl. In another bowl beat egg and sugar until thick. Add with milk to the sifted ingredients. Mix until smooth. Cook table spoonsful on a hot greased girdle or non-stick frying pan. Turn pikelets over when bubbles start to burst on top surface. Cook until golden. Makes 8 - 10.
